Cream the butter and sugar, add the flour sifted with the baking powder, whites of eggs. Bake one hour. MRS. E. VANDER STUCKEN. White Cake. % cup butter ; 1 cup milk ; 4 egg-whites ; 3 cups flour; 1^4 cups sugar; 3 level teaspoons baking powder; 1 level teaspoon salt. Cream butter and sugar, add milk, then flour, baking powder and salt, which should be sifted tho- roughly. Add whites of the eggs last, stirring gently. Use any flavoring to suit taste. MRS. AUGUSTA FRANZ. Sunshine Cake. (Prize Cake.) Whites of 7 eggs; yolks of 5 eggs; 1 cup sugar; 1 cup flour; pinch of salt; % teaspoon cream of tartar. Beat the whites of the eggs to which has been added the pinch of salt. When about half done, add cream of tartar and beat until very stiff. Add sugar, the beaten yolks, and lightly fold in the flour. Bake in ungreased mold from 20 to 40 minutes. Invert into cups and let stand until cold. MRS. ADOLPH WEBER. Spice Cake (Without Eggs.) 1 cup sugar; y2 cup butter or lard; 1 teaspoon cin- namon; y<z teaspoon allspice; 1 teaspoon nutmeg; 2 tablespoons chocolate or cocoa; % CUP pecans; 1 cup raisins; 1 cup sour milk; 1 teaspoon soda dissolved in 2 tablsspoons sour milk; 1 teaspoon vanilla extract; 2% cups flour. ALFRED GROBE. 139 — Spice Cake. 1 cup of molasses ; % cup butter ; 1 cup of sugar ; 2 eggs; 2 teaspooufuls of vinegar; 2 teaspoonfuls of soda; 14 teaspoonful each of cloves, allspice and cin- namon ; i/o CUP °i strong coffee ; flour to make a stiff dough. Mix all except molasses. Heat molasses and mix in spices, when cool mix all together and bake in quick oven. MRS. H. CORDES. Spice Cake. (Layer of Loaf Cake.) 1% cups sugar; 1 cup butter; 1 teaspoonful of all- spice ; 1 cup raisins ; 1 teaspoonful of cinnamon ; 1 cup sour milk; 1 teaspoonful of nutmeg; 3 cupfuls of flourWhite Cake; 2 teaspoonfuls baking powder; 3 eggs. This cake may also be made in three layers. MRS. MAX SCHOENEWOLF. Loaf Sponge Cake. 6 eggs; 1 cup boiling water; 14 cup cornstarch; y2 teaspoon lemon extract; 2 cups sugar; 2% cups flour; 1 teaspoon baking powder. Beat the yolks of the eggs very light, beating the sugar in gradually. Add the beaten whites of the eggs and the boiling water. Beat in very lightly the flour, cornstarch, and baking powder well sifted together. Flavor. Bake in a loaf pan in a moderate oven. MRS. FELIX W. MAIER, Snow Cake. 1 cup butter ; 2 cups sugar ; 1 cup cornstarch ; 2 cups flour; whites of 7 eggs; 1 cup cream; 2 teaspoonfuls baking powder. — 140 — Cream the butter and sugar, add cornstarch and the cream, then the flour sifted two or three times with the powder. Beat the whites very stiff and fold into the batter, beating as little as possible after adding eggs. Flavor with lemon extract. MRS. A. D. STAHL. Gold Cake. Cream together 1 cup sugar and % cups butter, add 1 whole egg and the yolks of 5 well beaten eggs, then y2 cup milk, 1 teaspoon vanilla and 2 cups of flour into which 1 heaping teaspoon baking powder has been sifted. Bake in moderate oven. ELLA NAUWALD SCHAEFER. Chocolate Cake. iy2 cups sugar y2 cup butter; 2 eggs; y2 CUP cocoa ; y2 cup hot water ; 2 cups flour ; y2 cup sour milk; 1 teaspoon soda; 1 teaspoon vanilla. MRS.EMIL KOLMEIER. Lunch Cake.
