MRS. WM. KALLENBERG. Poor Man's Cake. (Without Eggs. ) 2 cups sugar, 2 tablespoons butter, 2 cups sour milk, 1 tablespoon cinnamon, 1 cup raisins, a little nutmeg, 1 cup nuts, 1 teaspoon cloves, 1 teaspoon soda, 3 cups flour. Bake in shallow bread pan. MRS. LEWIS K. SMITH. — 141 — Marble Cake. — Light. 1 cup of white sugar, y2 cup of butter, y2 cup of milk, whites of 3 eggs, 2 cups of prepared flour. Dark. Y2 cup of brown sugar, 14 CUP butter, y2 cup mo- lasses, 14 cup milk, y2 nutmeg, 1 teaspooiiful cinnamon, Y2 teaspoonful allspice, y2 teaspooiiful soda, 2 cups flour, yolks of 3 eggsMarble Cake. Fill the pan with alternate spoonfuls of light and dark batter. MRS. E. C. HANSEN. Three Egg Angel Food. 1 cup sugar, 11/3 cup flour, y2 teaspoon cream of tartar, 3 teaspoons baking powder, a little salt, 1 tea- spoon vanilla, 2/3 cup scalded milk, whites of three eggs. Mix and sift first five ingredients four times. Add milk very slowly while hot, mix well, add vanilla flavor- ing, put in whites of eggs, beaten till light. Bake 45 minutes in slow oven. White Icing. iy2 cup powdered sugar; 2 tablespoons hot milk; y2 teaspoon butter ; y2 teaspoon vanillaThree Egg Angel Food extract. Add butter to hot milk, add sugar slowly to make right consistency to spread, then add vanilla. Spread on top and sides of cake. Sunshine Cake. 3 tablespoons shortening, % cup sugar, yolks of 3 eggs, 1 teaspoon flavoring extract, y2 cup milk, iy2 cups flour, 3 teaspoons baking powderSunshine Cake. — Cover with white icing, same as used for above Angels Food. MRS. DINA PRIESS. — 142 — Extra Hints for Baking 1st quarter hour: Cake should rise but not brown. 2nd quarter hour : Continue to rise and specks of brown appear. 3rd quarter hour : Cake should brown evenly all over. 4th quarter hour: Cake should shrink from sides of pan. Layer cakes bake in from 20 to 25 minutes. Loaf cakes bake in from 40 to 60 minutes. If cake sticks, lay a wet cloth over bottom of pan. MISS META DIETZ. Weights and Measures. 1 cup, medium size, 14 pint or *4 lb.. 4 cups, medium size, of flour weigh 1 lb. 1 pt. flour weighs % lb. 1 pt. Avhite sugar weighs 1 lb. 2 tablespoonfuls of liquid weigh 1 oz. 8 teaspoonfuls of liquid weigh 1 oz. 1 gill of liquid weighs 4 oz. 1 pt. of liquid weighs 16 oz. — 143 — Sandwiches. Chicken Sandwiches. To a cupful of cold boiled chopped chicken, add a half cupful of almonds or pecans, one-fourth cupful of stuffed olives, also chopped fine, and enough mayon- naise dressing-, to make of the right consistency. Spread thin slices of bread with butter, and place crisp lettuce leaves on these. Place the chicken filling between, and form into sandwiches. Mince hard boiled eggs, mix with chopped olives, or cress and parsley, moisten with butter or mayon- naise. Salt, pepper to suit the taste. Spread between sliced bread. 1 cup grated cream cheese; 4 tablespoonfuls milk; 1 small can pimentoes; 2 tablespoonfuls butter; 1 teaspoonful salt; 1 teaspoonful cornstarch; paprika to taste. Put cheese in double boiler, add salt, butter, paprika and cornstarch, dissolved in milk. Cook and stir until smooth. Remove from fire and add chopped pimento. MRS. R. G. STRIEGLER. Egg Sandwiches.
