CHOCOLATE ICING: 1 cup sugar; % oz. choco- late; 1 white of egg (beaten dry); % cup water; y2 teaspoonful vanilla extract. Boil sugar, water and chocolate, stirring. Cover vessel and boil 3 minutes. Uncover and boil until it forms a soft ball when tested in cold water; then beat slowly into the white of egg and continue beating (after extract is added) until thickened sufficiently to spread on cakes. MRS. HENRY HIRSCH. Pecan Cake* (Nuss Torte.) 1 lb pecans, (ground or chopped very fine) ; 1 lb sugar, 12 eggs, (whites of 7 eggs to be beaten se- parately) ; 4 tablespoons flour; spices to taste; grated rind of one lemon; a pinch of baking powder. Beat the 12 egg yolks ; 5 whites and sugar, at least 15 minutes. Add the grated lemon rind, spices, pecans, and lastly add alternately the stiffly beaten whites of the 7 eggs, and the flour, sifted with the baking powder. Bake at least one hour in a moderate oven, and do not shake while baking. MRS. AUG. CAMERON. — 136 — Mandelbrot. la/4 cups chopped almonds or nuts; 2 cups sugar;Pecan Cake 1 lb flour; 4 eggs; teaspoonful cinnamon, cloves, nut- meg ; 1 teaspoon baking powder. Mix dry ingredients well, add eggs, roll out. bake y2 hour. Cut into squares while still warm, then ice. MRS. No. 1. 2 cups sugar; 1 cup butter, stir to a cream; 4 well-beaten eggs; y2 cup cooked potatoes; y2 cup grated chocolate: V2 cup milk: 3 cups Hour; 1 tea- spoonful baking powder; 1 cup pecans; spices to taste. No. 2. 1 cup butter; 2 cups sugar; y2 cup milk; 1 cup pecans; 2y2 cups flour; 1 cup boiled potatoes, grated; 4 eggs, whites beaten to a froth ; 1 nutmeg ; 1 teaspoon- ful cinnamon; }/2 teaspoonful cloves; y2 cake chocolate; 2 teaspoonfuls baking powderPotato Cake No. 2. Reception Cake. 1 cup butter (small); iy2 cups flour; 5 eggs; iy2 cups powdered sugar; 1 teaspoonful baking powderReception Cake. — 137 — Beat butter until creamy; add flour gradually while beating constantly ; beat yolks of eggs until lemon colored; add sugar while beating constantly. Combine mixtures and add stiffly beaten whites of eggs. Sift over one teaspoonful of baking* poAvder ; beat thoroughly, turn into buttered and flamed dripping pan and bake in moderate oven. When done spread with icing and cut in diamond shaped pieces. MRS. MOURSUND. Silver Cake. 2 cups sugar ; 3 cups flour ; whites of 6 eggs ; 2 tablespoonfuls baking powder; 1 cup butter; % CUP sweet milkSilver Cake. Cream well butter and sugar; pour in milk. Stir in alternately the well beaten eggs and the flour which has been sifted several times with the baking powder. Bake in moderate oven. MISS JULIA H. ESTILL. Silver Cake. y2 cup of butter; iy2 cups of sugar; 1 cup of milk; 2 cups of Hour; 2 teaspoonfuls of baking powder; whites of 5 eggs beaten; 14 teaspoon flavoring. Beat thoroughly, before the whites of the eggs are added. The whites are folded in quickly and the cake baked in a moderate oven 1 hour. MRS. ED. STEIN. White Cake. 1 cupful of butter; 2 cupfuls of sugar; 3% cup- fuls of flour; 2 teaspoonfuls of baking powder; whites of seven eggs; 1 cupful of milk. — 138 — White Cake
