Salade de Qibier (Game Salad)

Ingredients

• 1 hard-boiled egg
• 2 lettuces
• pepper, salt, cayenne
• mayonnaise sauce (No. 277)
• Pickled beetroot for garnish

Method

   Cut meat from bones of game, remove skin, and cut into medium-sized dice.

   Trim and wash lettuces, shred leaves, cut egg white into star shapes, chop yolk and trimmings.

   Dress lettuces, meat, and mayonnaise in alternate layers in a salad bowl.

   Sprinkle seasoning between layers, cover with mayonnaise, and garnish with stars of sliced beetroot and hard-boiled egg white.
