Divide the dough and flavor half with vanilla (about 2 teaspoons) or lemon, and the other half with an ounce of melted chocolate or a couple tablespoons of cocoa sifted with a little flour. Add enough more flour to make a soft dough, about two-thirds of a cup or more according to the flour. Flour the bread board, roll out a portion of the dough about an eighth of an inch thick and cut out with a cooky cutter or a tum- bler. Bake in a hot oven, watching to avoid burning them.
