Yorkshire Tea-Cakes

Ingredients

• Three-quarters of a pound of Flour
• One and a half gills of Milk
• One ounce of Fat
• One Egg
• Half an ounce of German Yeast
• A teaspoonful of castor Sugar

Method

   Cream sugar and yeast; melt fat in a saucepan, pour milk on it to make lukewarm; pour this onto yeast and sugar.

   Strain into flour, add beaten egg, mix well.

   Flour a board, turn dough onto it, beat, cut into cakes.

   Grease cake-tins, put cakes in, let rise by the fire for 1 hour, then bake for 15 minutes.
