Yellow Flummery

Ingredients

• 2 ozs. of isinglass
• a pint of boiling water
• a pint of sherry
• the juice of two lemons
• the rind of one
• the yolks of 8 eggs

Method

   Beat the isinglass and put it into a bowl.

   Pour boiling water over it and cover until cold.

   Add sherry, lemon juice, lemon rind, and beaten egg yolks.

   Sweeten, then strain through an iron sieve when it boils.

   Pour into cups and moulds when nearly cold.
