Winter Salad

Ingredients

• 1 Spanish onion
• 2 medium sized beets
• 3 stalks of celery
• 1 tablespoon of minced herbs
• 1 tablespoon of butter
• 3 tablespoons of vinegar

Method

   Bake the onion and beets, slice them, and cut the slices in two.

   Cut celery fine and mix with it the minced herbs.

   Set in a cool place until serving time, then sprinkle with salt and pepper, and pour over butter and vinegar.

WINTER SALAD — Bake 1 Spanish onion and 1 large or 2 medium sized beets; slice them and cut the slices in two twice; cut 3 stalks of celery quite fine and mix with it 1 tablespoon of minced SALADS 2H herbs; mix all together and set in a cool place till time to serve; then sprinkle with salt and pepper, and pour over 1 tablespoon of butter and 3 tablespoons of vinegar
