Verjuice

Ingredients

• a sufficient quantity of fruit
• a little salt

Method

   Remove the seeds from the fruit, pound it in a mortar, add a little salt, then press the fruit and pass through a jelly bag several times until quite bright.

   Put the liquor into very clean, dry bottles that have been previously exposed to the fumes of brimstone, then cork as quickly as possible.
