Vegetable Marrow and Eggs

Ingredients

• One small Marrow
• Four or five Eggs
• A large piece of Toast
• Two or three ounces of Butter
• Parmesan Cheese

Method

1. 1

   Cut and toast a piece of bread the size of the dish.

   Boil a young marrow, cut each half into four pieces and place on the toast.

3. 3

   Beat eggs and put them in a saucepan with butter.

4. 4

   Season with pepper and salt, stir quickly until thickened.

5. 5

   Lay eggs on marrow, grate cheese over each portion.

6. 6

   Serve very hot.
