Turkish Delight

Ingredients

• 1 quart of granulated sugar
• 1/2 cup of cold water
• 1 ounce of gelatine
• 1 cup of boiling water
• six drops of oil of peppermint
• small quantity of green fruit coloring

Method

   Bring to a boil the sugar and cold water, then add the gelatine dissolved in boiling water.

   Boil 15 minutes very slowly.

   Add coloring and peppermint oil.

   Pour into buttered tins and let stand overnight.

   Turn out on a sugared pie board, cut with scissors, and roll squares in powdered sugar.
