Tripe, Southern Way. — Put into a saucepan a piece of butter the size of a small egg, and when the butter is melted add an onion cut into small pieces and cook until it is browned; then stir in a spoonful of flour. Grad- ually add a cupful of stock and one of stewed tomatoes. Add the tripe cut into small squares and season highly with salt, pepper, and a little curry powder
