Tomato Sauce

Ingredients

• One pint of tomato
• One table-spoonful of butter
• One table-spoonful of flour
• One small onion
• One bay-leaf
• One sprig of parsley
• One blade of mace
• Salt and pepper to taste

Method

   Simmer tomato, onion, bay-leaf, parsley, and mace for ten minutes; strain.

   In a dry pan, melt butter, add flour, cook for two minutes.

   Gradually add strained tomato, boil, add salt and pepper, and serve.
