Ingredients

• small firm, ripe, and even-sized tomatoes
• two or three chopped shallots
• minced ham
• mushrooms
• herbs
• some brown sauce
• a few bread-crumbs
• salt
• pepper

Method

   Select tomatoes, remove stems, cut off tops, and scoop out centers.

   Fry shallots in butter, add ham, mushrooms, herbs, moisten with brown sauce, incorporate bread-crumbs, and season.

   Fill tomatoes with this mixture, sprinkle with bread-crumbs and grated cheese, and bake in a sharp oven for about ten minutes.
