To Make an Astonishing Egg

Ingredients

• a dozen eggs
• a small bladder well washed and thoroughly cleaned

Method

   Separate the whites from the yolks of the eggs.

   Pour the yolks into a small bladder, shape it like a sphere, close it hermetically, and plunge it into boiling water.

   When the yolks are hard, peel the bladder off.

   Place the yolk ball in a larger bladder, add the whites, close it, and plunge it into boiling water again.

   Once hard, peel the bladder off and serve it in the center of a bowl of salad, then cut it up and serve with the salad.
