To Bake Turbot

Ingredients

• 1 small turbot
• 3 oz. butter
• 1 teaspoonful salt
• 1 teaspoonful pepper
• 1 egg
• 1 table-spoonful vinegar
• 1 table-spoonful parsley chopped
• 3 table-spoonfuls bread crumbs
• 1 table-spoonful ketchup

Method

   Fillet the turbot and cut into pieces.

   Wash and dry each piece, dip in beaten egg, then in a mixture of bread crumbs, parsley, pepper, and salt.

   Place in a buttered dish with butter on each piece and bake in a moderately hot oven for about 30 minutes, basting frequently.

   Serve in a hot dish with ketchup and vinegar.
