Swiss Cheese Omelet

Ingredients

• 2 eggs, well beaten
• Y tsp. of water
• one spring onion, chopped
• grated Swiss cheese, to taste

Method

1. 1

   Have omelet pan very hot with sizzling butter in bottom.

   Pour in eggs and water mixture.

3. 3

   Stir as it cooks until it begins to set.

4. 4

   Over one-half, sprinkle desired amount of cheese and chopped onion.

5. 5

   Fold omelet in middle.

6. 6

   Top with sour cream and sprig of parsley.
