Sweetbread Timbales. Make the white chicken force-meat (see chapter on "Garnishes"). Make a filling with one large sweet- bread or a pair of small ones, — there should be a half- pint when it is cut into dice, — three table-spoonfuls of chopped mushrooms, a scant half-pint of cream, one table-spoonful of flour, one teaspoonful of butter, half a teaspoon ful of salt, one-eighth of a teaspoonful of white pepper, and one-fourth of a teaspoonful of onion juice
