Sweetbread Pates

Ingredients

• Boil four sweetbreads
• add ten mushrooms
• one-fourth of a pound of butter
• half pint of milk
• a little flour
• pepper
• salt
• nutmeg

Method

   Boil four sweetbreads; when cold, chop fine, add ten mushrooms, also chopped fine; mix with these one-fourth of a pound of butter, half pint of milk, a little flour, pepper, salt and nutmeg.

   Put on the fire, stir till it begins to thicken; then put in puff paste that has been prepared, and bake the pates a light brown.
