Sweet-potato Croquettes

Ingredients

• as many sweet potatoes as will make two cupfuls when mashed
• a table-spoonful of butter
• the beaten yolks of two eggs
• a table-spoonful of cream or rich milk

Method

   Boil sweet potatoes, mash while hot, and mix in butter, beaten egg yolks, and cream.

   Cool the mixture, mold into croquettes, roll in egg and cracker crumbs, and refrigerate before frying in deep fat until golden brown.
