Sweet-Potato Croquettes

Ingredients

• enough boiled sweet potatoes to make a pint when mashed
• half a cupful of hot milk
• two generous table-spoonfuls of butter
• one teaspoonful of salt
• two eggs
• some crumbs for breading

Method

   Mash the sweet potatoes smooth and light.

   Beat in the hot milk, then the salt and butter.

   Beat one egg until light and mix it in.

   Shape the mixture into croquettes.

   Beat the second egg in a soup-plate, cover the croquettes with it, and roll in the bread crumbs.

   Fry in fat until they turn a rich brown.
