Stewed Terrapin

Ingredients

• Terrapin, 1,
• Eggs (yolks, only), 4,
• Butter, 1/2 cup.
• Cream, 1/2 cup,
• Madeira, or sherry, 1/2 cup.

Method

   Put the terrapin in boiling water for 5 minutes to loosen the skin, then skin it and return to hot water until claws are soft.

   Remove the bottom shell, head, and claws, and cut the meat into small pieces.

   Make a dressing with flour, yolks of hard-boiled eggs, butter, salt, red pepper, cream, and madeira or sherry.

   Stew well and serve hot.
