Stewed Onions

Ingredients

• 6 Onions.
• Eschalot.
• Parsley.
• Mushroom.
• Butter.
• Stock.

   Peel onions and cut tops and bottoms.

   Blanch in boiling water for 20 minutes.

   Drain.

   Remove center of each onion and fill with meat flavored with parsley, eschalot, and mushrooms.

    Butter onions.

    Place in a stewpan with stock.

    Simmer over slow fire, turning until tender and glazed.
