Stewed Kidneys

Ingredients

• 6 Kidneys
• Thyme
• 2 Mushrooms
• Lemon
• Parsley
• 2 oz. of Butter
• Stock

Method

   Skin the kidneys and cut them into slices.

   Mince eschalot, mushrooms, and thyme, using double the quantity of parsley.

   Sprinkle the mixture on the kidneys with salt and pepper.

   Melt butter in a stewpan, fry the kidneys until brown, thicken with flour, and finish with stock and lemon juice.

   Let it come to a boil, skim, and serve with fried bread.
