Steak à la Jardinière

Ingredients

• 2 lbs. Steak
• 1 gill Green Peas
• 1 gill French Beans
• 1/2 oz. Flour
• 1 oz. Butter
• 1 Carrot
• 1 Turnip
• 1/2 pint Gravy
• Salt

Method

   Cut the steak into neat pieces and fry quickly in butter.

   Remove steak, add flour, pour on gravy, and stir until it boils.

   Return steak, simmer gently for three hours.

   Add carrot and turnip after two hours.

   Boil peas and beans separately, add to stew five minutes before serving.

   Arrange steak on a hot dish, surround with vegetables, and pour over gravy.
