Soy Bean Croquettes

Ingredients

• 1 cup cooked beans
• 0.5 cup milk
• 0.5 teaspoon salt
• onion to taste
• 0.25 to 0.5 cup bread crumbs
• 1 tablespoon butter
• 1 tablespoon flour
• Chopped parsley

Method

1. 1

   Melt butter in a double boiler, add flour and mix thoroughly.

   Heat, add milk and onion, cook until thickens, then add salt.

   Rub beans through a sieve, mix with white sauce and crumbs.

   Dip in egg white, then in bread crumbs, fry in hot fat.
