Seven-Years Ketchup

Ingredients

• lqt. of very old beer
• 1 pint of red wine
• 6oz. of boned anchovies
• ljoz. of peeled shallots
• loz. of mace
• -Joz. of cloves
• a little whole ginger-root

Method

   Combine all ingredients in a saucepan and boil until reduced by one-third.

   Let cool, pour into an earthenware jar, cover, and leave for a week until clear.

   Strain, add flavoring if desired, boil again, cool, and bottle.
