Semolina Cheese Cakes

Ingredients

• 1 gill maize semolina
• 1 pint of milk and water mixed
• sugar or syrup to sweeten
• a little almond essence
• a little Jam

Method

   Boil the maize semolina in the milk and water.

   Place in a tin and steam for 1 hour.

   Sweeten with sugar or syrup, and add almond essence.

   Line patty pans with potato paste, place a little jam at the bottom, cover with semolina, and bake in a moderate oven for about 20 minutes.
