Savoury Sheeps Trotters

Ingredients

• 6 sheep’s trotters.
• 2 ozs. dripping.
• J an onion,
• i teaspoonful vinegar.
• Forcemeat.
• A sprig of parsley.
• Salt and pepper,
• i teaspoonful of Lemco.
• Some breadcrumbs and a little grated cheese.

Method

   Boil trotters until tender.

   Melt dripping in a stewpan, fry sliced onion and parsley, season with salt and pepper.

   Pour in stock with Lemco, cook slowly for half an hour.

   Fill trotters with forcemeat, lay on a dish, cover with breadcrumbs, pour gravy with vinegar, sprinkle with breadcrumbs and cheese, brown in the oven, and serve in the dish.
