Savoury Meat Toast

Ingredients

• Half a pound of cold Meat
• Four ounces of Bread-crumbs
• A teaspoonful of chopped Parsley
• Half a teaspoonful of chopped Lemon-rind
• Half a gill of white or brown Sauce
• Two Eggs
• Salt
• Pepper
• Toasted Bread

Method

1. 1

   Mince the meat, mix with bread crumbs, parsley, lemon-rind, moisten with sauce, add egg yolks, season, and stir over heat until set.

   Place on toasted bread, smooth, cover with beaten egg white, sprinkle with fried bread-crumbs, and bake in a moderately heated oven for about ten minutes.
