Sausage Rolls

Ingredients

• One-half pound of cold pork
• four leaves of sage
• one-half teaspoonful of pepper
• one grain of cayenne
• twelve ounces of flour
• four ounces of butter
• one egg
• one and one-half gills of cold water
• one teaspoonful of baking-powder
• one teaspoonful of salt

Method

   Chop the pork and sage finely, mix with pepper, half of the salt, and cayenne.

   Rub butter into flour, add baking powder and remaining salt.

   Make a well, add egg yolk and water, knead lightly.

   Roll out to 1/4 inch thick, cut into 4x3 inch pieces.

   Brush edges with egg white, fill with pork mixture, seal edges, brush with egg, and bake in a hot oven for 30 minutes.
