Sand Tarts

Ingredients

• 1 lb. butter
• 2 lbs. flour
• 2 lbs. sugar
• 3 eggs (whole) slightly beaten

Method

   Cream butter and sugar until light and fluffy.

   Add flour and mix until like pie crust, then add beaten eggs.

   Knead for about ten minutes and let stand in refrigerator for a few hours before rolling.

   Roll between sheets of wax paper to make very thin cookies.

   Bake in a medium hot oven, watching carefully to avoid browning.

   Brush tops with beaten egg and sprinkle with sugar before baking.
