Rose Tablet (Pera)

Ingredients

• a pound of milk
• the same quantity of sugar
• a few drops of cochineal
• a few drops of attar of roses

Method

   Boil milk and sugar until candy high.

   Remove from fire, stir in cochineal and attar of roses, and beat until thick and creamy.

   Pour onto an oiled dish, and when nearly cold, cut into small round cakes about an inch and a half in diameter.
