Roast Loin of Veal

Ingredients

• insert the forcemeat
• put buttered paper over the kidney

Method

1. 1

   Make a pocket with your finger between the skin and flesh of the veal and insert the forcemeat; skewer it securely, flour it, and put buttered paper over the kidney.

2. 2

   Rub the skin with a little salt and put it in the oven; remove the paper half an hour before serving.

3. 3

   Make gravy as directed for roast fillet of veal.
