Riz à la Polonaise (Rice, Polish Style)

Ingredients

• 1/2 lb. Carolina rice
• 2 oz. butter
• 1 quart chicken or beef stock
• 3 small shallots
• 1 small onion stuck with 3 cloves
• 4-6 small firm tomatoes
• salt and pepper
• grated cheese

Method

   Clean rice but do not wash.

   Put in a stew-pan with butter, stir over fire for a few minutes, add shallots, brown slightly, moisten with stock, add onion and tomatoes.

   Cook for about an hour.

   Before serving, add grated cheese and remove onion.

   Dress rice in pyramid shape on a hot dish, garnish with pimiento strips, and serve hot.
