Rendering Kitchen Fat

Ingredients

• every piece of fat meat upon which you can lay your hands
• cold water to cover

Method

1. 1

   Cut the fat meat into small pieces, put these in a saucepan with cold water to cover, and boil over a clear fire.

   Leave the lid off the pan, and boil gently, stirring occasionally to prevent burning.

3. 3

   When the water has evaporated, pour the contents through a strainer into a basin.
