Quick Muffins

Ingredients

• 2 eggs
• 2 cups flour
• Two-third teaspoon salt
• One and one-third cups sweet milk
• Two-thirds tablespoon butter
• 3 level teaspoons baking powder

Method

   Separate the eggs, drop the yolks into a larger bowl and beat them with a wooden spoon.

   Add the milk, salt, flour and melted butter.

   Beat until smooth and light.

   Add baking powder and mix well.

   Fold in the well-beaten whites and fill well-greased gem pans two-thirds full.

   Bake in quick oven 25 or 30 minutes.
