Queen Cakes

Ingredients

• 1 lb. of dried flour
• the same of sifted sugar
• of washed clean currants
• 1 lb. of butter
• eight eggs

Method

   Wash 1 lb. of butter in rose water, beat it well, then mix with eight eggs beaten separately.

   Gradually add the dry ingredients and beat the whole for an hour.

   Butter little tins, teacups, or saucers, and bake the batter, filling only half.

   Sift a little fine sugar over just as you put it into the oven.
