Puff, made of Cheese

Ingredients

• ½ pint basin of cream curd
• a spoonful and a half of flour
• 3 eggs
• only 1 white
• a spoonful of orange flower-water
• ¼ of a nutmeg
• sugar to make pretty sweet

Method

   Strain cream curd from the whey, and beat it fine in a mortar with flour, eggs, orange flower-water, nutmeg, and sugar.

   Lay a little of this paste in small very round cakes on a tin plate.

   If the oven is hot, ½ an hour will bake them.

   Serve with pudding sauce.
