Potted Herrings

Ingredients

• Six Herrings
• Two ounces of Butter
• Salt
• Nutmeg
• Mace
• Cayenne

Method

1. 1

   Clean herrings and place in a pie dish with a little butter.

   Bake in a moderate oven.

   When cold, remove skin and bones.

   Pound in a mortar and add creamed butter.

   Season with salt, nutmeg, mace, and cayenne.

   Mix into a paste and press into small pots.

   Cover with melted butter or sweet mutton dripping and tie down with paper.
