Potato with Dumplings

Ingredients

• 2 cups finely diced raw potato
• 1 tablespoon vegetable butter
• 1 cup diced bleached lettuce
• 6 cups water
• 2 teaspoons chopped onion
• Salt

Method

   Add potato, lettuce, onion, butter, and salt to cold water, bring to a boil, and simmer for 10 minutes.

   For dumplings, mix egg yolk, milk, melted butter, and flour into a smooth batter.

   Force through a colander into boiling soup, cover, and simmer for 20 minutes.

   Season with salt and parsley before serving.
