Potato Croquettes

Ingredients

• Add to the boiled and mashed potatoes
• half their weight of butter
• seasoning of salt
• seasoning of pepper
• a trifle of onion, minced fine
• two well-beaten eggs

Method

1. 1

   Mix the mashed potatoes with butter, salt, pepper, minced onion, and beaten eggs.

   Form into shapes, dip in beaten egg and bread crumbs, and fry in deep hot fat.

   Garnish with parsley and serve hot.
