Potato Croquettes. Boil six white potatoes and mash them until very smooth. Add one egg, a lump of butter the size of a walnut and salt to taste. With the hands roll into balls as large as a small lemon, but perfectly round. Coat them with egg, then sifted bread crumbs and drop into deep boiling lard
