Potato Balls

Ingredients

• 1 lb. mashed potatoes
• 1 oz. butter
• Bread crumbs
• 2 eggs
• Pepper
• Salt
• Pat for frying

Method

   Season boiled and mashed potatoes with white pepper and salt.

   Beat smoothly with butter and the yolk of one egg, form into round balls about an inch and a half in diameter.

   Dust with flour, brush with a beaten egg, toss in bread crumbs, and fry in hot fat until pale brown.

   Drain on porous paper and serve hot, garnished with parsley.
