Potato Balls

Ingredients

• 1 lb. Potatoes
• 1 dessert-spoonful of Milk
• 1 oz. of Butter
• 2 Eggs
• 1 dessert-spoonful of Parsley
• 1 teaspoonful of Salt
• | teaspoonful of Pepper
• Bread Crumbs
• Frying Fat

Method

   Boil and mash the potatoes smoothly.

   Add seasoning, one beaten egg, and milk.

   Shape into small balls, brush with egg, and cover with breadcrumbs.

   Fry in hot fat for about 2 minutes until pale brown.

   Drain on paper and garnish with parsley.
