Pineapple Upside Down Cake

Ingredients

• 14% cups sifted flour
• Met Salt
• 5 T. softened shortening
• % cup milk
• 6 T. butter
• %2 cup pineapple juice
• 7 maraschino cherries
• 1% t. baking powder
• 4 Cup granulated sugar
• 1 egg, well beaten
• 1 t.’ vanilla
• 2-3 cup brown sugar
• 7 slices pineapple

Method

   Sift flour once, measure, add baking powder, salt and sugar and sift together three times.

   Add butter.

   Combine egg, milk and vanilla.

   Add to flour mixture, stirring until all flour is dampened.

   Beat vigorously.

   Melt 6 T. butter over low flame.

   Add brown sugar, pineapple juice and cook and stir until thick.

   Add 7 slices pineapple in the mixture and put cherries in the center of each slice of pineapple.

   Pour in cake batter and bake in moderate oven until done.

    Turn upside down on dish with pineapple on top.
