Pickled Cucumbers No. 1

Ingredients

• 12 small cucumbers
• 1 lb chillies or 2 teaspoonfuls
• 1 lb. salt
• 8 young vine leaves

Method

   Select nice young cucumbers, put them in a jar.

   For every gallon of water, use a quarter of a pound of salt and a teaspoonful of cayenne or four ounces of chillies.

   Cover cucumbers with this mixture, pack tightly, and ensure water covers them.

   Put on vine leaves, cork securely, and allow to stand for eight or nine days.
