/2 cups butter; 6 eggs: iy2 cups sour cream: 2 teaspoonfuls soda; y2 lb currants: % lb raisins; *4 lb citron; 1 nutmeg; sufficient flour to form stiff batter. MRS. MOURSUND. Lightning Cake. 1 cup butter ; 4 eggs : 1 cup sugar ; 1 heaping cup flour : 1 teaspoonful baking powder ; rind and juice of one lemon. Cream butter and sugar ; add beaten eggs, then flour : beat well. Spread 1 inch thick on flat buttered pans, sprinkle with a mixture of sugar and cinnamon. Bake in hot oven; when done cut in squares. MISS E. LUNGKWITZ. MRS. ALB. STAATS. — 135 — Pecan Cake. y2 cup butter; 1% cups sugar; % cups milk- 2 cups flour; 2 level teaspoonfuls baking powder; 1 cup nuts (chopped fine) ; 4 whites of eggs. Sift flour and baking powder 3 times; cream butter, add sugar, then alternately milk and flour, lastly the whites of the eggs and nut meats. Bake in a sheet in a shallow pan 30 to 40 minutes. CHOCOLATE ICING: 1 cup sugar; % oz. choco- late; 1 white of egg (beaten dry); % cup water; y2 teaspoonful vanilla extract. Boil sugar, water and chocolate, stirring. Cover vessel and boil 3 minutes. Uncover and boil until it forms a soft ball when tested in cold water; then beat slowly into the white of egg and continue beating (after extract is added) until thickened sufficiently to spread on cakes. Pecan Cake* (Nuss Torte.) 1 lb pecans, (ground or chopped very fine) ; 1 lb sugar, 12 eggs, (whites of 7 eggs to be beaten se- parately) ; 4 tablespoons flour; spices to taste; grated rind of one lemon; a pinch of baking powder. Beat the 12 egg yolks ; 5 whites and sugar, at least 15 minutes. Add the grated lemon rind, spices, pecans, and lastly add alternately the stiffly beaten whites of the 7 eggs, and the flour, sifted with the baking powder.
