Peanut Pound Cake

Ingredients

• Three large or four small eggs
• a scant cupful of granulated sugar
• one tablespoonful of lemon juice
• one tablespoonful of ice water
• one cup of sifted nut meal
• one-half cupful of sliced citron
• one-half to two-thirds of a cupful of pastry flour
• salt

   Prepare ingredients cold.

   Beat yolks with sugar, add water and lemon juice.

   Stir in nut meal and salt.

   Beat egg whites to stiff froth, fold into yolk mixture, and bake slowly.
