Ingredients

• the meat of a boiled calf’s foot
• two large apples
• 1 oz. of candied orange
• grate half a nutmeg
• a spoonful of French brandy
• ½ lb. of currants

Method

   Chop the meat of a boiled calf’s foot, apples, and candied orange very small.

   Mix with grated nutmeg, yolk of an egg, brandy, and currants.

   Make a good puff paste, roll in different shapes, and fill; they may be baked or fried.
